VALDOBBIADENE PROSECCO D.O.C.G. RIVE DI SAN PIETRO DI BARBOZZA

This wine is light hay yellow in color, with fine and lingering bubbles. On the nose, it delivers fruity and floral notes with hints of ripe yellow apple, banana, delicate notes of melon, and acacia flower. On the palate, it’s fresh, fruity, and lightly sweet with very smooth texture. The finish lingers on the palate.

CLASSIFICATION Sparkling wine (spumante), controlled origin designation, Dry.

PRODUCTION AREA Vineyards located in the hamlet of San Pietro di Barbozza on morainic hilltops with mixed calcareous subsoils, including marl and in certain cases calcareous clay.

TRAINING SYSTEM Simple double-arched espalier with 2,500 vines per hectare.

MAXIMUM YIELD 13.5 tons per hectare.

HARVEST PERIOD Second ten days of September.

VINIFICATION After a meticulous sorting of the berries, the whole berries from certain higher hilltops with greater exposure to the sun are crushed in a pneumatic press. The must obtained with this soft pressing was racked to temperature-controlled tanks where it remained until it was transformed into sparkling wine.

PRODUCTION Once Villa Sandi’s selected yeasts have been added to the must, fermentation takes place in temperature-controlled tanks at 15-16° C. Once the desired alcohol and residual sugar levels have been obtained, fermentation is arrested by lowering the temperature. After a short aging period, the sparkling wine is ready to be bottled.

PAIRINGS An excellent aperitif wine; raw shellfish and seafood salads, fresh and creamy cow’s milk cheeses.
